Our wine sommelier Bobby Chipman shares his deep knowledge of wine with our attendees and offers some unique and fun tasting experiences.
In September of 1988, Bobby was hired at Dodd’s Liquor City in Millwood, NY, to finance night classes at Westchester Community College. He worked alongside founder Dodd Farber. After completing two years of school, he was accepted at Westchester University to study human movement. Dodd’s infamous words to him at the time were: “What are you going to do with that?” Dodd eventually talked Bobby into staying.
Soon thereafter, the person in charge of wine tasting and purchasing left, and Bobby was expedited into the position, working next to Dodd, tasting wine. For the next 35 years, his career has been all about tasting, studying and traveling for the sake of wine. To this day he is still compelled by the world that is wine.

About Domaine Carneros
Domaine Carneros is a singular Napa Valley winery best known as a small grower-producer of méthode traditionnelle sparkling wine, Pinot Noir, estate vineyards, and a breathtakingly beautiful Château.
Founded by the noble family behind Champagne Taittinger, Domaine Carneros was established in 1987 when Claude Taittinger selected a 138-acre parcel in the heart of Carneros, Napa Valley, wisely choosing Eileen Crane-often referred to as America’s doyenne of Sparkling Wine-to oversee the development of the Taittinger style in Carneros. In 2020, after 33 years, Crane passed the torch to a new CEO, Remi Cohen, whose role carries on the Taittinger tradition of visionary female leadership. Ushering in a new era of Domaine Carneros, Cohen brings two decades of experience in all facets of the wine industry to the Château.
The heart of Domaine Carneros has always been our méthode traditionnelle sparkling wines, with distinctive styles ranging from the classic vintage-dated Brut cuvée to our luxury Le Rêve Blanc de Blancs. In 1992 we added rich, complex Pinot Noir to our portfolio and our passion for exceptional sparkling and still wines continues to grow.
All of our wines proudly hail from the Carneros appellation, and 100% of our fruit comes from our six estate vineyards comprising 400 acres. As anyone who has driven between Napa and Sonoma can tell you, the Domaine Carneros Château is a stunning regional landmark. Flourent Cosme Vouvray Grosse Pierre
The Chenin Blanc grape is grown in the Loire Valley, in the town of Vouvray, located 2 hours west of Sancerre. Different than Sav Blanc from Sancerre because of its pretty white flower note, pear fruit nuances with crisp, lively, mineral-driven acidity. Pair with your favorite shellfish.
Feudo Montoni Grillo
The estate is located about 2 hours southeast of the capital, Palermo. The grape variety Grillo is grown on very steep terraces at about 2100 feet above sea level. First tastes of the wine show a little sweetish white fruit, but as we go on to taste more, we get a round texture with grassy notes, and the “fruit” taste becomes more crisp on the finish.
Suertes del Marqués 7 Fuentes
From the Canary islands located off the coast of Africa located east of Morocco, this is one of the more obscure wine varietals you will find. The reason is the grape, Listan Negro is indigenous to the island and has no outside lineage to other grapes. The volcanic soils of the island add a fresh acidity and minerality to the wine with black cherry fruit notes. Medium-bodied and a low 12.5% alcohol. Very unique wine.
Cantine due Palme Negroamaro
From the “heel of the boot” in Puglia Italy, about an hour and a half south of Bari, the Negroamaro is simply a juicy, supple joy to drink. No hard tannins but with subtle acidity to keep the wine alive. Cherry, blueberry fruits with a little taste of dates to remind you of the wine’s Italian origins.
La Posta Armando Bonarda
Coming from the Mendoza region in Argentina, the Bonarda grape has become the country’s second most cultivated grape behind Malbec. Different from Malbec because of its sturdy style and dark blue plums and cherries. The wine’s tannins, it’s drying compound, have a subtle chalky quality that I think gives it a hearty feel and balances well with the fruits. This serves well with winter comfort dishes.
